Local, vibrant, seasonal produce cooked with care, traditionally in earthenware dishes (If your home has gas). I have lived on Mallorca 10 years, learning the language - Mallorquín, befriending small suppliers, tasting and learning to cook local recipes. My food is simple, yet delicious.

My previous cooking background is within French family farmhouses having spent long summer childhood months helping prepare meals and enjoying the delights of eating delicious, home grown, farm produce.

Having travelled extensively I have been able to savour the world´s culinary delights & learn recipes from places other than the Mediterranean.

I have a keen interest in healing food ideas having studied food & nutrition; traditional recipes & growing methods. You are, after all, what you eat! All special dietry requirements respected and catered for with care.

EXAMPLE MENU

Please tell me the things that you enjoy to eat the most, this menu is just a list of suggestions and not limited to this. My cooking is mostly inspired by what looks best when I go shopping.

TO START Abundant vitality packed. I choose what looks vibrant on the day of purchase:

Roasted Red Peppers, stuffed with tomatoes, garlic & basil

Boquerones – Fresh, Anchovies marinaded in Garlic & Lemon juice - on toasted country Bread.

Chickpea, garlic & saffron soup.

Gazpacho chilled soup.... it is good, believe me.

Pimientos de Padron. Small peppers panfried and tossed in salt. A bit of a russian roulette...

Green bean salad… simple & sensational. Served with boiled egg.

Grilled Goats Cheese on Toast, & a drizzle of Honey – with Green Leaves & chopped Nuts.

Mussels steamed in White Wine, Onions, bruised Garlic & Bay Leaf.

Calamari - squid. Lightly floured, fried and very tasty! With a side wedge of Lemon.

Prawns - pan fried in Garlic and Olive Oil... licking fingers allowed & bread to mop up the juices…

MAIN COURSES -

Tomato and red pepper chicken - simmered in a fresh sauce served with potatoes from Sa Pobla and fresh vegetables.

Roasted cod with fresh Thyme & seasonal Vegetables.

Pork fillet pan fried with sage.

Spanish Omelette - Tortilla Española... d e l i c i o u s! Served with green leaves

Albondigas - Mallorquin meatballs, either ground red meats , white meat or fish served in a fresh tomato or ground almond sauce with a fitting accompaniment...

Paella. Seafood, Chicken and Rabbit, Vegetarian or a mixture of all! Saffron only, no horrible packet mixes or artificial additives. I bring my own gas burner and dish.

Goats cheese and walnut lasagne - light and nutty.

Rosemary and Garlic Lamb - mountain fresh.

Chicken marinaded in Lemon & Thyme - Roasted, stuffed with Mediterranean Herbs & Garlic

Frito Mallorquin - offal, fennel & lashings of Love....oh & garlic of course!

Pan fried Fish with Lemon. Simple and good-bone free. Served with potatoes and Green Beans.

Aubergines stuffed with Mincemeat, mountain Herbs and fresh Tomatoes baked until rich and delicious..

Lamb Tagine with couscous - cubes of tender lamb cooked with North African spices, saffron, dried fruits and nuts..

Foil baked fish - gently snuggled up with some garlic, thyme, lemon & olive oil

AND TO FINISH...

Rich chocolate Tart... yes - it is rich.
Lemon Tart - t a n g y

Orange and Almond Cake - made with fresh, ground almonds

Apple Tart - upside down or otherwise!

Poached Pears with red wine and vanilla pod

Baked Bananas (shh with chocolate sauce...)

Fresh fruit salad

Selection of Local Cheeses & Membrillo (quince jam)

OR... IF YOU WOULD LIKE ME TO COOK OVER A LONGER PERIOD FOR A WEEK OR MORE and you can´t decide what goes best together just leave it up to me & I´ll see what looks good when I go shopping.

When we evaluated our holiday in Mallorca, we saw that to have you as a cooker was the best experience there. The two days we had the food delivered from the other lady and it was nice and a lot to eat but somehow we missed the nice smell from the kitchen. As I told you my mum is very curious on some of your recipes. So if you have some time left it would be great if I could tell my mum what is the secret behind your cooking J She liked very much the lemon tart, carrot soup with thyme, apple tart, chocolate pots. And if you know how to do gaspacho soup that would be great to know. My husband and even Patrik they tasted it in Mallorca and they really like it.
